The special taste of sugarcane is not as sweet as syrup or sugar, it is just enough to wake you up. Some people also added a bit of sour taste from kumquat or tangy citrus to enhance the original taste. You can also mix it with pineapple and berries smoothies and make a new refreshing drink.

Because sugarcane juice is an instant beverage and to keep it fresh, most sellers would not make the juice before local customers buy it. It just takes them a few minutes to crush sugarcane stalk into juice by a special machine. To make a cup of about 500ml of sugarcane, they would need to juice 2-3 stalks.

After being extracted, the residue fibers of sugarcane are thrown into a wooden basket in front of the machine. And the sweet-scented of juice is usually contained in an aluminum bowl, then poured into cups of ice. Previously, the juice used to be packed in a plastic bag tied by a rubber band surrounding a straw, but now it is often served in a disposable plastic cup. You can witness this whole process because the machine is installed in the stalls where you stand to make your order.
